MICROBREWERY DESIGN
(2017)
BRIEF:
Re-design of an existing two-storey, dual-function space with internal vertical circulation.
The design outcome should incorporate Slow Design Principles and in turn promote concepts of social, cultural and environmental sustainability.
One part of the occupancy must afford some for educational opportunities for Brisbanites involving the 'slow' movement. The other should be a retail occupancy with the provision of slow products or food/drink for consumption

RESPONSE:
Ziggy’s is a multipurpose space that brings food, drink and people together. It offers a bar, restaurant and the Bagman Brewing Co.
nano-brewery to the Brisbane community in one single location.
The menu and design was inspired by the slow food movement, striving to provide
a sustainable and innovative approach to how we consume beer here in Brisbane.
Ziggy’s operates as a non-for-profit business, with revenue raised through the sale of food and beer going back into the Brisbane community, especially towards the homeless. Much like the W estvleteren Brewery in Belgium, the aim of producing beer on site is to create a quality product in small batches while educating the community on the processes involved.
Through tours and group beer making sessions available through Bagman Brewing Co., the business actively encourages the community to participate in the process and expand their own knowledge. The business model aims to slow down the rate of homelessness in Brisbane, slow down the over consumption of alcohol in our community through education and slow down the environmental impacts mass production and consumerism.
The main feature of the space is an atrium spiral staircase that span from floor to roof. Cooper tension rods crisscross over each other around the perimeter of the stairs. Hop vines grow up this, aided by hydroponic lights as well as natural sunlight filtering down from the roof, to encase patrons in a lush oasis as they transition between floors. A resin floor encasing thousands of recycled beer bottle twist tops is featured on the ground level. An inclusive space includes a lift for disabled access to all floors, PW D and ambulant toilets and a glazed bi-fold shop front that creates an inviting atmosphere. Locally sourced recycled materials have been used in the fit out.
Ziggy’s goal is to provide a space that allows the people of Brisbane to experience and reflect on their lives. The patron’s journey through the space is a multi-sensory experience that encourages people to engage with processes of making and learning about horticulture through gardening, eating and drinking.
